So today was one of those days… I had plans! I woke up with A LOT of plans! I was going to work out, I was going to whip up my next recipe for my blog, I was going to get a shower (long overdue) and I was going to have time to make it out to the lake to enjoy part of the day with my kids. Dairy Free Mint Chocolate Chip Fudgesicles

I know, I said I wasn’t big on dessert…but I’ve always had a slight obsession with ice cream. When I want dessert, it’s my go to. But after realizing that running for the bathroom minutes after devouring a bowl wasn’t normal, I decided to see how my body would fair without ice cream or most other dairy. I’m a bit lactose intolerant, but ice cream hits me the hardest. Sometimes I’m willing to sacrifice feeling bad for a few hours just to satisfy my craving. Grilled Corn with Lime and Chili Powder aka Bhutta

I was recently researching Indian spices and I ran across a most amazing way to eat corn. It’s Bhutta! Typically served by street vendors in India, it’s roasted over hot coals and then served hot with lime and chili powder. Ya just dip the lime in the chili powder and then squeeze and rub it all over the corn. The lime, chili powder combination with the sweet corn is truly incredible.
