I’ve had many requests and comments on my Texas Style Chili recipe from people who really want to make it, but it’s either too complicated or takes too much time, and so they have asked if I could simplify it. I totally understand! This recipe is more of an adventure and less than convenient, unless of course you have the time and enjoy spending hours in the kitchen. A great way to keep and organize recipes does exist! It’s no fairy tale.

Once upon a time, there was a girl who loved to try new recipes. When she found a recipe she wanted to try, she longed to keep it somewhere that she could find it easily and it wouldn’t be forgotten. She had cookbooks with dog-eared pages, pages torn from magazines, photo copies from cookbooks and handwritten recipes on cards or scrap pieces of paper. She tried to put the loose ones in binders with sections marked with tabs. But most of the time she just stuck them in a folder hoping to find time to organize them later…which never happened! Texas Style Chili aka Chile con Carne

I now have lived in the south long enough to grow to like things a little more hot and sticky and not so cold and icy. Don’t get me wrong. I enjoy the occasional big snow that we get during the winter months. But you can have the cold any other day of the year. This year we didn’t even get any time to adjust.
