Dairy Free Eggnog with Coconut Cream

I’m hosting Christmas Eve this year for the family. And what would Christmas Eve be without eggnog? It just wouldn’t. So, I’m planning on making dairy free eggnog with coconut cream instead of the traditional heavy cream. Yes, the eggnog is for everyone, but the diary free part is just for me. WARNING: This holiday devil drink is highly addictive, so if you were looking to keep your calorie intake in check over the holidays, I would just nix it. Substituting the coconut cream for the heavy cream only cuts about 30 calories per cup out of almost 800! I’m not a fan of feeling like I’m fighting a losing battle over the holidays. So I plan to partake. You … Read more…

Gluten Free Turkey Meatball Soup with Fennel

The colder weather, longer nights, and the absolute gluttony of Thanksgiving have me spent mentally and physically. I’m feeling like I need total body and soul cleansing. So, I decided to create one for myself with this gluten free turkey meatball soup with fennel. Yes, fennel! I recently tried fennel for the very first time in a recipe I found for braised center cut pork chops and it was divine. Since then, I’ve done some research on this wonderfully aromatic and delicious veggie and found out that it is also off the charts in health benefits. First, and probably its greatest health benefit, is that it helps reduce inflammation, which is what I need most at the moment. I’m feeling … Read more…

Bacon Wrapped Honey Mustard Chicken

What’s for dinner? I don’t care! I’ve been, well, a mom lately, and I haven’t had much time for anything else this week, not even cooking. And as much as I love to cook, it’s just not worth it for me to spend a lot of time on dinner for my kids. There’s nothing worse that slaving all day in the kitchen just to hear “I don’t like that” before it even touches their lips. But, because I was once that little girl, sitting at the table, not liking anything and never wanting to try anything new, I have no choice but to understand my kids limited palate. It’s called a picky eater and it is every child, to one … Read more…

One day it’s in the mid 80’s, the next not much over 60, sunny, raining, windy, dry, humid…make up your mind already! And now the rain won’t stop, going strong for the past four days with no end in sight. Sound like a recipe for a cold? Well yes it is. And guess who got one. Well I decided there was only one thing that could make me feel better about … Read more…

Dairy Free Mint Chocolate Chip Fudgesicles

I know, I said I wasn’t big on dessert…but I’ve always had a slight obsession with ice cream. When I want dessert, it’s my go to. But after realizing that running for the bathroom minutes after devouring a bowl wasn’t normal, I decided to see how my body would fair without ice cream or most other dairy. I’m a bit lactose intolerant, but ice cream hits me the hardest. Sometimes I’m willing to sacrifice feeling bad for a few hours just to satisfy my craving. But usually I try to steer clear of dairy all together if possible. If it does that to my body, it can’t possibly be a good thing for me. It’s the height of summer, it’s … Read more…
